Why the fig?
The fig tree is a shared symbol of Caucasian kitchens — its shade offers shelter, its fruit offers abundance. We carry that same spirit: different kitchens brought together under one roof. On Baku Boulevard, under the cool breath of the sea — a quiet cup of tea in the morning, a quick lunch at noon, and in the evening a long Georgian table waiting for you. In our kitchen the khinkali are folded by hand, the khachapuri bakes in a wood oven, and the desserts are made fresh every morning. There is always a fig at the centre of the table — as jam, fresh, or crowning a dessert.
